NAAN BREAD WITH TANDOORI CHICKEN
TANDOORI CHICKEN
INGREDIENTS
2 pounds chicken, cut
into pieces
1 teaspoon salt
1 lemon, juiced
1 1/4 cups plain yogurt
1/2 onion, finely chopped
1 clove garlic, minced
1 teaspoon grated fresh ginger
root
2 teaspoons garam masala
1 teaspoon cayenne pepper
1 teaspoon yellow food
coloring
1 teaspoon red food coloring
2 teaspoons finely chopped
cilantro
1 lemon, cut into wedges
DIRECTIONS
- Remove skin from chicken
pieces, and cut slits into them lengthwise. Place in a shallow dish.
Sprinkle both sides of chicken with salt and lemon juice. Set aside 20
minutes.
- In a medium bowl, combine
yogurt, onion, garlic, ginger, garam masala, and cayenne pepper. Mix until
smooth. Stir in yellow and red food coloring. Spread yogurt mixture over
chicken. Cover, and refrigerate for 6 to 24 hours (the longer the better).
- Preheat an outdoor grill for
medium high heat, and lightly oil grate.
- Cook chicken on grill until no
longer pink and juices run clear. Garnish with cilantro and lemon wedges.
NAAN BREAD
Ingredients
- 2 cups plain
flour
- 3/4 cup lukewarm
water
- 2 tbs oil
- 2 1/2 tbs Greek
yoghurt
- 1 tsp salt
- 1 tsp yeast
- 1 tsp sugar
- 1 pinch baking
powder
Method
STEP
1
Mix yeast with water in a bowl and set aside.
STEP

Sift flour and add salt, sugar and baking powder and mix together.
STEP

Add yoghurt and mix together, then add water with yeast and oil and mix.
STEP

Form into a dough, by kneading on a floured surface.
STEP

Place dough back into bowl and proof in a warm place, covered with a cloth,
for 4 hours or until dough rises well.
STEP

Preheat oven to 230-240C. Place 2 trays in oven to heat as well.
STEP

Divide dough into 6 equal parts and roll into rectangles 6 mm thick.
STEP

Before placing the dough into the oven wet fingertips with water and pat very
lightly on the dough.
STEP

Line trays with baking paper before placing naan on top.
STEP
10
Bake until golden spots appear and the dough is cooked.
STEP 11
Spread hot
bread with garlic butter or serve plain
